Chicken and Guns. (Rachel Monahan / City Cast Portland)

Earlier this week, we got a delivery of Big’s Chicken at my house. I didn’t wait for my family to get home; I dipped a jojo into their white gold sauce and forgot everything that might have troubled me the moment before.

Here are three chicken spots and some of their magical sauces, in no particular order:

Big’s Chicken: White Gold Sauce

This sauce is a white Alabama-style BBQ sauce. It’s like mayonnaise spun into, well, gold.

Location: Northeast Portland and Beaverton

Mama Bird: Chimichurri or Vadouvan Curry

It’s a tough choice for best sauce here — between the oily herb-filled chimichurri or the curry yogurt with a hint of sweetness. But you can opt for both!

Location: Northwest Portland

Chicken and Guns: Peruvian Aji Sauce

Described as a creamy jalapeno, cilantro, lime, and garlic sauce, it’s got a kick. According to the menu, you can buy a bottle to take home.

Locations: Cartlandia food cart pod in Southeast and a relatively new brick-and-mortar in Gales Creek, Ore.

What’s your favorite Portland comfort food? Do you have any favorite secret sauces that come with chicken and potatoes?
